Greek Santa Barbara’s Recipe
This recipe is very old and rare. In north Greece women used to cook this recipe on December 4, the celebration day of Santa Barbara here.
Santa Barbara considered as protector of children from disease and this dish is offered for this reason.
I don’t know how started this recipe, but I know how to cook it and this is our issue today.
Ingredients
- 500 gr. wheat
- 250 gr. raisins
- 250 gr. dried figs
- 250 gr. Sugar
- 3 tablespoon sear flour
- 1 teaspoon salt
- walnuts
- cinnamon powder
Method
The first day, place the wheat with water and let it all night to soften.
The next day place the wheat in a large pot with 3-4 lt water, add raisins, figs, sugar, flour and salt.
Reduce heat to medium and cook it, covered, for 50 minutes.
Add more water if it is necessary.
Serve with walnuts and cinnamon powder.
